While the properties of non-stick cookware help in the cleaning and cooking of foods and entrees, the main chemical, called PTFE, can produce harmful fumes if heated at high temperatures. Since most people do not constantly monitor their sauté pan's temperature to make sure it is within the safe heating temperatures companies have produced non-stick pans made with no PFTE, or Teflon. PFTE is not toxic on its own; only when the pan is heated over 500° F does it start to breakdown and release its fumes.
The fumes are not lethal in humans but do produce flu like symptoms; birds are affected lethally by the fumes of the PFTE according to studies. The answer is to simply change the cookware you use.
